Ingredients
- 1 small cauliflower head, broken into florets
- 1 red pepper, quartered, deseeded and sliced
- 1 tbsp oil
- 1 small red onion, halved and thinly sliced
- 4 tbsp lemon juice
- 1 tbsp raisins
- 4 tbsp walnuts, roughly chopped or broken into chunks
- 1 red chilli, deseeded and chopped
- 1 tbsp fresh dill, chopped
- 120g hummus
Method
- Heat the oven to 200⁰C
- Coat the cauliflower and pepper with ½ tbsp of the oil, and roast in a medium roasting tin for 30 minutes until tender
- Put the onion and 3 tbsp of the lemon juice in a bowl
- Add the raisins, walnuts and chilli
- Toss the roasted veg with the onions, remaining oil, and dill
- Spread the hummus over two plates
- Spoon the veg over the hummus and serve
