Recipe adapted from GoodFood 

Ingredients 

  • 1 small cauliflower head, broken into florets
  • 1 red pepper, quartered, deseeded and sliced
  • 1 tbsp oil
  • 1 small red onion, halved and thinly sliced
  • 4 tbsp lemon juice
  • 1 tbsp raisins
  • 4 tbsp walnuts, roughly chopped or broken into chunks
  • 1 red chilli, deseeded and chopped
  • 1 tbsp fresh dill, chopped
  • 120g hummus

Method 

  1. Heat the oven to 200⁰C 
  2. Coat the cauliflower and pepper with ½ tbsp of the oil, and roast in a medium roasting tin for 30 minutes until tender
  3. Put the onion and 3 tbsp of the lemon juice in a bowl 
  4. Add the raisins, walnuts and chilli 
  5. Toss the roasted veg with the onions, remaining oil, and dill 
  6. Spread the hummus over two plates 
  7. Spoon the veg over the hummus and serve
