Serves 6
Ingredients:
- 1 tbsp olive oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 3 large carrots, chopped
- 3 celery stalks, chopped
- 1.5L vegetable stock
- 1 tsp dried thyme
- 1 tsp oregano
- ½ tsp salt plus more to taste
- ½ tsp pepper plus more to taste
- 3 cans white beans, drained and rinsed
- 150g baby spinach
- Grated parmesan for serving
Method:
- In a large pot or saucepan, heat the olive oil over medium high heat.
- Add the onions and cook until onions are translucent, about 3-5 minutes.
- Add the garlic, carrots, celery, thyme, oregano, salt and pepper, and cook for an additional 2-3 minutes.
- Add the stock and beans, bring to a boil, reduce heat and simmer for 15 minutes to combine all of the flavours together.
- Stir in the spinach and continue to simmer until the spinach wilts, about 2 minutes.
- Remove from heat, taste, add in any extra salt or seasoning if needed and sprinkle grated parmesan.
- Serve immediately.
