Serves 6 

Ingredients:

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 3 large carrots, chopped
  • 3 celery stalks, chopped
  • 1.5L vegetable stock
  • 1 tsp dried thyme
  • 1 tsp oregano
  • ½ tsp salt plus more to taste
  • ½ tsp pepper plus more to taste
  • 3 cans white beans, drained and rinsed
  • 150g baby spinach
  • Grated parmesan for serving

Method:

  1. In a large pot or saucepan, heat the olive oil over medium high heat. 
  2. Add the onions and cook until onions are translucent, about 3-5 minutes. 
  3. Add the garlic, carrots, celery, thyme, oregano, salt and pepper, and cook for an additional 2-3 minutes. 
  4. Add the stock and beans, bring to a boil, reduce heat and simmer for 15 minutes to combine all of the flavours together. 
  5. Stir in the spinach and continue to simmer until the spinach wilts, about 2 minutes. 
  6. Remove from heat, taste, add in any extra salt or seasoning if needed and sprinkle grated parmesan. 
  7. Serve immediately.
