Serves 4-6 

Ingredients

  • 5 cups watermelon, cubed 
  • ½ large cucumber, cubed (optional) 
  • 1 cup cherry tomatoes, halved (optional) 
  • 1 avocado, cubed 
  • ½ red onion, thinly sliced (optional) 
  • 1¼ cups feta, cubed 
  • 2 tbsp fresh mint, finely chopped 
  • 2 tbsp toasted pumpkin seeds or almonds (optional) 
  • 2 tbsp olive oil 1 lemon, juiced (or 2 limes) 
  • Salt and pepper to taste 

Method

  1. Arrange the watermelon, cucumber, tomatoes, avocado, onion, and feta in a large bowl 
  2. Whisk together the olive oil, and lemon juice. Season to taste 
  3. Drizzle the dressing over the salad and toss gently 
  4. Garnish with the mint and nuts or seeds if using 
  5. Serve chilled
  • You can substitute the watermelon with nectarines or mango 
  • Add some biltong shavings for a local twist 
  • This salad can be stored for up to 3-4 days in the fridge
