Serves 4-6
Ingredients:
- 5 cups watermelon, cubed
- ½ large cucumber, cubed (optional)
- 1 cup cherry tomatoes, halved (optional)
- 1 avocado, cubed
- ½ red onion, thinly sliced (optional)
- 1¼ cups feta, cubed
- 2 tbsp fresh mint, finely chopped
- 2 tbsp toasted pumpkin seeds or almonds (optional)
- 2 tbsp olive oil 1 lemon, juiced (or 2 limes)
- Salt and pepper to taste
Method:
- Arrange the watermelon, cucumber, tomatoes, avocado, onion, and feta in a large bowl
- Whisk together the olive oil, and lemon juice. Season to taste
- Drizzle the dressing over the salad and toss gently
- Garnish with the mint and nuts or seeds if using
- Serve chilled
- You can substitute the watermelon with nectarines or mango
- Add some biltong shavings for a local twist
- This salad can be stored for up to 3-4 days in the fridge
