Serves 4-5 

Ingredients:

  • 3 tbsp butter 
  • 1 small onion, finely chopped 
  • 1 garlic clove, minced 
  • ⅓ cup flour 
  • 2 cups milk 
  • 2 cups stock 
  • 2 cups water 
  • 1 tsp salt 
  • ½ tsp black pepper 
  • 400g potato, peeled and cut into 1-2cm cubes 
  • 5 cups broccoli, broken into small florets 
  • 1 cup grated cheddar 

Method:

  1. Melt the butter in a large pot over medium high heat. Add the onion and garlic and cook for 3 minutes or until onion is softened 
  2. Add the flour to the milk and mix well 
  3. Slowly pour the milk into the pot while stirring. Keep mixing as it turns into a thickish, smooth paste 
  4. Add the stock, water, salt and pepper and stir 
  5. Add the potato 
  6. Bring to simmer then adjust heat so it's simmering gently. Cook for about 8 minutes without the lid or until potato is almost cooked. Stir occasionally so that it doesn’t stick to the base 
  7. Add broccoli and stir. Cook for 2 minutes or until broccoli is cooked to your liking, then take the pot off the stove. 
  8. Stir through the cheese 
  9. Serve
