Serves 4-5
Ingredients:
- 3 tbsp butter
- 1 small onion, finely chopped
- 1 garlic clove, minced
- ⅓ cup flour
- 2 cups milk
- 2 cups stock
- 2 cups water
- 1 tsp salt
- ½ tsp black pepper
- 400g potato, peeled and cut into 1-2cm cubes
- 5 cups broccoli, broken into small florets
- 1 cup grated cheddar
Method:
- Melt the butter in a large pot over medium high heat. Add the onion and garlic and cook for 3 minutes or until onion is softened
- Add the flour to the milk and mix well
- Slowly pour the milk into the pot while stirring. Keep mixing as it turns into a thickish, smooth paste
- Add the stock, water, salt and pepper and stir
- Add the potato
- Bring to simmer then adjust heat so it's simmering gently. Cook for about 8 minutes without the lid or until potato is almost cooked. Stir occasionally so that it doesn’t stick to the base
- Add broccoli and stir. Cook for 2 minutes or until broccoli is cooked to your liking, then take the pot off the stove.
- Stir through the cheese
- Serve
