Serves 6 

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 1 bell pepper (any colour), chopped
  • 1 tsp minced garlic
  • 1 can black beans, drained
  • 1 can sweetcorn, drained
  • ½-1 tbsp taco seasoning
  • 2 avocados, pitted and chopped
  • 2 tomatoes, chopped
  • 1 lime, juiced
  • salt and pepper to taste
  • 6 medium whole-grain wraps OR 3 pitas
  • ¾ cup mozzarella, grated
  • ½ cup sour cream or salsa

 Method

  1. Heat the oil in a large pan over medium heat
  2. Add the onion, bell pepper and garlic and cook for 2-3 minutes or until onion is lightly golden
  3. Add the beans, sweetcorn and taco seasoning and cook for another 2-3 minutes
  4. Remove from the heat and cool for a few minutes before assembling
  5. In a medium bowl, combine the avocado, tomato, lime juice and a pinch of salt and pepper
  6. Warm the wraps in the microwave for 10 seconds each
  7. To assemble, lay a wrap on a flat surface, spread with a tbsp of sour cream or salsa, and top about a sixth of the bean mixture, avocado mixture and grated mozzarella (alternatively, cut the pitas in half and fill them with the mixtures as per the wrap)
  8. Fold in the sides and fold the bottom of the wrap over the filling, then roll to close
  9. Serve and enjoy
