Add the onion, bell pepper and garlic and cook for 2-3 minutes or until onion is lightly golden
Add the beans, sweetcorn and taco seasoning and cook for another 2-3 minutes
Remove from the heat and cool for a few minutes before assembling
In a medium bowl, combine the avocado, tomato, lime juice and a pinch of salt and pepper
Warm the wraps in the microwave for 10 seconds each
To assemble, lay a wrap on a flat surface, spread with a tbsp of sour cream or salsa, and top about a sixth of the bean mixture, avocado mixture and grated mozzarella (alternatively, cut the pitas in half and fill them with the mixtures as per the wrap)
Fold in the sides and fold the bottom of the wrap over the filling, then roll to close
