Serves 4 

Recipe adapted from feelgoodfoodie.net 

Ingredients 

  • 200g spaghetti
  • ¼ cup olive oil
  • 1 garlic clove, minced
  • 1 small onion, diced
  • ½ tablespoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon stock powder
  • ½ green bell pepper, diced
  • 1 can diced tomatoes
  • 1½ cups water
  • ¼ cup fresh basil, chopped (plus more for garnish)
  • 1 cup mozzarella cheese
  • Parmesan cheese, grated, for serving

Method 

  1. Preheat the oven to 190⁰C. 
  2. Place the uncooked spaghetti in a greased baking dish. 
  3. Add the olive oil, garlic, onions, Italian seasoning and salt. Use your hands or tongs to gently toss and evenly distribute the ingredients. 
  4. Add the bell pepper, canned diced tomatoes, water and basil on top of the spaghetti, and toss it again to evenly coat the spaghetti with the sauce and vegetables. 
  5. Bake uncovered for 40 minutes. 
  6. Toss the spaghetti and sprinkle with mozzarella cheese. 
  7. Continue baking uncovered for 15-20 more minutes or until the top is browned and bubbly. 
  8. Remove from the oven, garnish with fresh basil and Parmesan cheese and serve.

* This recipe can be made with lots of extra veggies such as mushrooms, marrows, broccoli, cauliflower etc. Alternatively serve with a salad to increase the veggie intake.
