Ingredients
- 2 cups (500 ml) stoneground whole wheat flour (or a mix of whole wheat and cake flour)
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 cups milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1 Hass avocado
- Small amount of butter or oil to fry the pancakes
Method
- Add all of the dry ingredients to a large mixing bowl and combine
- Add all of the wet ingredients to another bowl
- Add in the scooped avocado flesh using a stick blender to blitz until smooth
- Mix the wet ingredients into the dry ingredients using a spatula to fold the two together (don’t over mix the batter)
- Cook in a non-stick frying pan over medium heat – cook the flapjacks until you see bubbles on the surface then flip and continue cooking until golden brown on both sides
- Repeat until all of the batter is cooked
- Serve the flapjacks with some fruit, yoghurt and nuts
