Serves 4-6 

Recipe adapted from Crush 

Ingredients 

  • 2 cups (500 ml) stoneground whole wheat flour (or a mix of whole wheat and cake flour) 
  • 2 tablespoons sugar 
  • 1 tablespoon baking powder 
  • 1 teaspoon salt 
  • 2 cups milk 
  • 2 eggs 
  • 1 teaspoon vanilla extract 
  • 1 Hass avocado 
  • Small amount of butter or oil to fry the pancakes 

Method 

  1. Add all of the dry ingredients to a large mixing bowl and combine 
  2. Add all of the wet ingredients to another bowl 
  3. Add in the scooped avocado flesh using a stick blender to blitz until smooth 
  4. Mix the wet ingredients into the dry ingredients using a spatula to fold the two together (don’t over mix the batter) 
  5. Cook in a non-stick frying pan over medium heat – cook the flapjacks until you see bubbles on the surface then flip and continue cooking until golden brown on both sides 
  6. Repeat until all of the batter is cooked 
  7. Serve the flapjacks with some fruit, yoghurt and nuts
